Pulled Pork Potato Fritters

Ingredients

 ½ C flour
 ½ tsp. Salt
 ½ tsp. Pepper
 ½ tsp. Paprika
 1 Egg
 ¼ C Water
 1 C Panko breadcrumbs
 1 lb. Brookwood Farms Pulled Pork – Carolina Vinegar Sauce (#12031)
 1 C Potato salad
 1 C Cole slaw, for plating
 1 Bunch green onions, sliced thin on bias, for garnish
 6 oz. Brookwood BBQ Sauce (#19008), for garnish

Instructions

1. Pre-heat deep fryer to 350 degrees.

2. In bowl, mix together flour, salt pepper and paprika combining well.

3. In separate bowl, beat egg with and water and set aside.

4. In another separate bowl place breadcrumbs.

5. In large bowl, combine Brookwood Farms Pulled Pork and potato salad, mixing well and break apart any large chunks of potato. Form mixture into 3 oz. “Fritters or patty’s”.

6. Next place each fritter one at a time into flour, then the egg and then the breadcrumbs.

7. In preheated deep fryer, cook breaded fritters for 3 minutes or until golden brown. May also pan fry in ¼ vegetable oil. 2-3 minutes per side over med heat or until golden.

8. Plate fritters on top of Cole slaw and top with green onions and Brookwood BBQ Sauce.
