Pulled Pork Carnitas Enchiladas

Ingredients

 6 (8”) Flour Tortillas, lightly fried
 Canola Oil, for frying pan
 2 cups Brookwood Pulled Pork Carnitas (#15006)
 1 (8 oz.) can diced tomatoes and green chilies, drained
 1 cup black olives, sliced and drained
 1 1/4 cups Queso sauce-White (15oz. jar)
 2 cup Red Enchilada Sauce
 1 cup Mexican blend cheese, shredded
 ¼ cup Fire Roasted Salsa
 Sour Cream, for garnish
 1 (16 oz.) Refried Beans, canned and hated
  ¼ cup Cilantro, chopped for garnish

Instructions

Pre heat oven to 400 degrees.

Pre heat frying pan and fry tortillas in oil until hot but still supple. Set aside to cool.

Combine Brookwood Pulled Pork, tomatoes and green chilies, black olives, and Queso sauce.

Down the center of each tortilla, fill carnitas and roll each tortilla and place in coated baking pan.

When pan is filled, top with enchilada sauce and cheese. Bake until hot, about 20 minutes.

On top of each plated tortilla, add salsa, sour cream, and cilantro. Serve with warm refried beans on the side.
